This is one of my favorite 'go-to' cookie recipes and particularly when they are being made for children (these are what I made when our little friends came visiting this past Monday.) They are easy to make and stay moist and tasty even days after making them which is a definite plus!
Oatmeal Chip Cookies
- 1 cup butter softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 3 cups quick-cooking oats
- 2 cups flour (plus a little extra - maybe a Tbsp. or two? I didn't measure the extra I added.)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup semisweet chocolate chips
In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, baking soda, and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips. Chill dough for 1 hour or until firm.
Roll dough into 1 1/2 inch balls; and place on greased baking sheets. Bake at 350 degrees for 10 minutes or until very lightly browned. Remove from oven and let set for a couple of minutes. Remove cookies to wire racks to cool. Enjoy!
And if the recipe makes more than what can be eaten within several days time, freezing cookies works so well. Simply put them in an air tight container (with waxed paper between the layers), and then freeze. Then you have fresh tasting cookies ready whenever you like or for when unexpected company stops by!
